A simple and easy dish, yet so delicious and flavorful, cooked in coconut milk with the wonderful aroma of spices and roasted in ghee and fresh curry leaves. Try this wonderful seafood delicacy to spice up your day.
- Squid:- 2 medium sized squid( clean and cut it into rings)
- Coconut oil:- 2 tbsp
- Shallots:- 10 chopped
- Tomato:- 1 small sized
- Ginger:- 1 piece
- Garlic:- 5 to 6 Pods
- Kashmiri red chilli powder:-2 tsp
- Turmeric Powder:-1 tsp
- Coriander Powder:-1 tsp
- Pepper powder:-1 tsp
- Fennel seed powder:-1/2 tsp
- 1/2 tsp tamarind paste
- Coconut milk:-1/2 cup thick milk
- salt to taste
- Ghee:-2 tbsp
- Curry leaves
Method:-
Heat oil in a thick bottomed kadai. Add chopped shallots, ginger and garlic and saute well. Add all the masalas and mix well. Switch off the flame and let it cool down completely. Transfer it to a blender and grind it to a coarse paste.
Heat 2 tbsp of ghee on a low flame in a thick bottomed pan. Add ground masala paste and 1/2 tsp tamarind paste to the ghee and mix well. Add coconut milk and squids. Cover and cook until it is done stirring occasionally and roast it till it becomes dry. Use more ghee if needed.
