For karanji dough:-
Maida :-1 ½ cup
Ghee :-2 tbsp
Salt to taste
Water to kneed the dough
Semolina bor suji :- ½ cup
Desicated coconut:- ½ cup
Poppy seed or khus khus:- 2 tbsp
Chopped dry fruits and nuts :- ½ cup
Sugar :- ½ cup
Cardamom powder :- 1 TSP
Oil for deep frying
1/4 cup water to seal the edges of karanji
To prepare the dough for karanji
In a mixing bowl add Maida ,ghee and salt and crumble the mixture well. Add required water and kneed it to fine smooth dough. Let it rest for about 20 minutes.
To prepare the filling:-
In a kadai heat ghee over medium heat. Add semolina or sooji and roast until golden brown. Add desicated coconut and roast for few minutes. Add chopped nuts and dry fruits and switch off the gas. Let the mixture cool down completely. Add sugar and cardamom powder and combine well with the sooji mixture.
Take a small sized dough and roll to a thick poori. Place one tbsp or more of the filling in the middle of the poori. Spread the water around the edges of the poori fold together the edges by pressing gently . In a kadhai heat oil ,deep fry the karanji over medium heat from both sides until golden brown.
