Kerala Sadya special Aviyal

Aviyal is basically mixture of many vegetables such as yam, raw banana , carrot, potatoes,drumstick ,beans, ash guard, pumpkin etc simmered in curd and coconut gravy and seasoned with curry leaves and coconut oil. It is the most important side dish in Sadya recipe. It is so delicious and healthy side dish in Kerala Ona Sadya . In Kerala you will find any varieties of Aviyal recipe in different parts of Kerala. This recipe is followed in my family.

Ingredients

  1. Mixed vegetables (yam, raw banana, beans, ash guard, potato, carrots, drumsticks etc ) cut in to small thick slices (as showed in the video below):-100 grm each around
  2. 1 cup grated coconut
  3. 1 tsp turmeric powder
  4. 2 or more green chillies depending upon taste
  5. 1 tsp cumin seeds
  6. 2-3 shallots
  7. garlic pods -3
  8. curd -1/2 cup
  9. salt to taste
  10. coconut oil-2-3 tbsp
  11. water half cup
  12. curry leaves few
Kerala Sadya special Aviyal

Method

  1. Cut all the vegetables into thick long pieces
  2. in a mud pot add 2 tbsp coconut oil. Add all the vegetables except drumsticks. And sauté for few minutes. Add turmeric powder , salt to taste and 1/2 cup water and mix well. Close the lid and cook the vegetables until it is half cooked. Keep the flame to the lowest while cooking.
  3. Add drumstick pieces . Mix well . Cover and cook until all the vegetables are cooked well.
  4. in a mixer grinder jar add 1 cup grated coconut , 1 tsp cumin seeds,1 tsp turmeric powder, 1 or 2 green chillies depends on your taste , shallots 2-3 ,garlic pods and 1/4 cup curd . Coarsely grind it without using water.
  5. Add this coconut mixture to the cooked vegetables. Gently mix and combine well. And cook for another 2 minutes.
  6. Check salt and add more if needed. Also add frw curry leaves.
  7. Switch off the gas and immediately add 1 -2 tbsp coconut oil. Combine well. Aviyal is ready to serve
  8. Serve it with hot boiled rice
