Kerala Sadya special Olan
Olan is a very traditional and classic sadya side dish.olan is the most important side dish in traditional Kerala sadya recipes.its a very simple recipe and can be done in no time.
Olan is basically cooked with ash guard or kumbalanga and vanpayar or black eyed pea as basic ingredients and mildly spiced with green chilles and flavoured with coconut milk and coconut oil. Its completely gluten free and vegan.


  1. Cowpea or black eyed pea or vanpayar-1/4 cup soaked overnight
  2. Ash guard or pumpkin diced 300 grm
  3. Green chillies 2-3
  4. 1 cup thick coconut milk
  5. curry leaves few
  6. 1 tbsp coconut oil
  7. salt to taste


  1. In a pressure cooker add overnight soaked cowpea or vanpayar and salt to taste. Add one cup water and mix well. Close the lid and cook for 2-3 whistle .
  2. In a mud pot add add chopped ash gourd or pumpkin, 2-3 split green chillies depends upon your taste, salt to taste, few curry leaves, 1 cup of water ,mix well and cook over low flame.
  3. Mash the ash gourd a little. Add cooked vanpayar or cowpea ( do not add the stock)
  4. add 1 cup thick coconut milk. Simmer for few minutes. Do not boil . Check salt and add more if needed. Switch off gas and immediately add 1 tsp coconut oil. Mix well . Add few more curry leaves. Cover and let it rest for sometime.
  5. Olan is ready to serve. Serve it with hot boiled rice.
