Simple home made carrot cake recipe filled with amazing flavours of carrots, nuts & raisins and spices

3 medium-sized carrots
• ½ cup coarsely chopped nuts and raisins
• 3 eggs
• 3/4 cup vegetable oil
• 2 cups flour
• 1.5 cup sugar
• 1 tablespoon baking powder

Add the carrots, the eggs and the oil in a blender and blend it well. In a bowl, mix flour, sugar and baking powder. Pour the carrot-egg-oil puree into the dry ingredients mixture along with nuts and raisins and combine.

Place in an 8-inch cake pan and bake for 35 to 45min at 350 F . When a toothpick comes out clean, it is ready.
