Potato Mixture/Aloo lacha namkeen
- Potatoes:-:- 6 to 7 medium sized
- Cashews, raisins & peanuts all together :-1 cup
- Salt to taste
- Pepper powder:- 1 tsp
- oil to deep fry
- Curry leaves few
Wash and peal the skin of the potatoes. Grate the potato into thin fingers using a potato grater. Put it in water and wash it for about 4 to 5 times to remove the starch complely. Drain the potatoes and put it a cotton cloth to remove the excess water.
Heat oil in a kadai, keeping the flame to medium heat, deep fry the potato fingers untill crip and golden. Remove from oil and put it in kitchen towel to remove excess oil
Fry cashews,raisins, peanuts and curry leaves in same oil and remove from oil and put it also in kitchen towel to remove excess oil.
To combine the mixture in a bowl add fried potato, fried nuts and curry leaves ,1 tsp or more pepper powder and salt according to your taste, and mix well. Store in airtight containers.
